Quick chicken recipes are my go to dinner plan when I haven't actually planned anything! One of my kids favorites is my healthy Italian chicken - 2 ingredients and 35 to 40 minutes in the oven and it's ready and I know the kids will eat it!
You just take one boneless chicken breast for each person (more if you want leftovers) place it in an oven safe baking dish pour your favorite marinara sauce over it (I try to find one with all ingredients I recognize - Classico is one of my favorites) and bake it for 35 to 40 minutes.
It's great served over pasta, or with bread and salad on the side.
